The Cessena prohibition is only on particular models with 40 degrees of flap travel. The models with 30 degrees are not prohibited.

I would not worry about the CHT on a water cooled engine. The water temp prob is located right at the top of the cylinder head. That and EGT are the parameters to watch. EGT is the most immediate a ... |

I set mine so maximum flap just allows full aileron travel both ways.
With this setting I've never had a premature stall.
