How big of a rudder trim are those flying ending up needing? I am amazed
that I still have 1/3 a ball out (to the right) and wanting to fly right
wing low with a 9" long x 1" deep wedge on the lower end of the rudder. If I
lightly press right rudder, the ball centers, the wings level and speed
increases.

I have a 6" Vertical x 2" horiz trim piece that works perfectly. I know that it is the lazy man's (woman's or trans gender's) solution to a lot of trim-fly trim-fly sessions. (How is that for PC??? eh.....)

Ok, even though I still consider myself a newbee, here's my take on rudder trim.... I attached a small piece of aluminum with a slight bend in it and went and flew... each time seeing if it were enough, and then just adding a little more bend. But the important part for me was setting the rpm the same. I seem to cruise at or over 167 knots, LOP, WOT, and between 2,000 and 2,100 rpm. At those settings (especially the rpm) the ball is almost always, dead center. That being said, at higher rpm settings, 2,400 and above, the ball, most of the time, is not centered.
