Don't forget that at this point it had still 30 deg of flap so maybe it did get off the ground quicker. Just think of the little picture on the Zenith site that shows the 701 popping right off the ground and then flying down the field to pick up speed. The airframe was shorter was well, if its not there it can't weigh anything. If you want some more lightening ideas. John B has recently posted a list on the Yahoo 701 builders site.
As for how much it weighed, I agree that 480 was probably closer to the actual, just like the 580 lbs listed now is optimistic for a standard/912 build. For reference the Feb 87 plans list the empty weight as 430 to 440 with the 503, it states a max engine weight of 140lbs.
