yes a fly inn would be great although i need to repair the runway first. it would be fun to meet other Kolb owners and get to see their airplanes and pick their brains for wisdom.

First question, yes.
If you have enough airspeed that the tail is up, you have rudder but it is
still a tail dragger and they are always trying to swap ends while on the
ground. Remember the center of gravity is behind the main gear and wants to
be in front of it. It is up to the pilot to make a tail dragger stays in the
unnatural state of wheels first.
Second question, maybe.
That is probably something you will have to learn how to coordinate during
taxi tests. Once your fingers learn the routine it will probably not be an
issue.
Having said that, I can see where hand levers could cause a problem on a
bounce or a gust of wind. I have toe brakes and the same could probably be
said of them.
During initial taxi tests I discovered that my brakes were not adjusted the
same from side to side. I stopped and corrected that before continuing on
with tests. No sense in testing something with a known abnormality that
might cover up something else.

I asked a similar question and a member (Sorry, forgot your name)
graciously sent me a pic of his. He has a cable looped between his dual
levers. See attached.

For years I had individual hand brakes mounted on the stick, and I loved it. To me it was very easy to use either or both at the same time. It all depends on how close together they are. I built my own, so the handles were where I wanted them. It did not take long for me to get tired of getting out of the plane to pick up the boom tube to turn the plane around. Without individual brakes it takes a 20 acre field to turn around.
Now I have hydraulic heel brakes and I have to concentrate to make sure that my heels are not activating the brakes when I take off.
Give yourself a chance to get used to the hand brakes before you change them. Do be sure to get a break away tail wheel, and do the reinforcing of the tail post.
