Would it be permissible to bend an EGT probe as in the attached image and still receive good service from it? This is for avoiding interference with the cowl and other obstructions in a Long-EZ installation.

My guess is that there should be no problems. The temperature sensing thermocouple element is actually the welded junction of the two dissimilar metals that make up the thermocouple. Disturbing the stainless protective housing, especially outside the hose clamp area, SHOULD have no effect.
