Is there a video or instructions somewhere that describe how to splice shielded pair wire?

Michael,
I soldered ground wires to the shields. You could probably adapt that technique. See the three photos at the bottom of my blog post Wiring Harness Installed.

You strip back the shields, slide a length of shield braid over cable, and a length of heat shrink. Splice and insulate the conductors individually on a staggered basis, then slide the loose shield braid over the join and solder around both ends. Finally insulate over the top with sleeving.
