Helo Chris,
Since Kolb’s fly tail high, I put my tank outlet on the bottom front center of my tank so that all fuel would be available. The fuel line then runs threw a gascolator on the way to the fuel pump.

gas pickup tube in tank
This is the set up that I used for my tanks. Rather than have a fixed tube, I choose to use a flexible gas tubing with a filter that could move with the fuel yet keep crud out of it and allow me to get every ounce of fuel out of the tank. Has worked for me since 1996.

Somewhat related - I felt led to add two inline fuel shutoff valves, one for each tank.My thinking behind this was that if one side would vibrate apart, develop a pinhole, or some issue like that - I would then be sucking air and have no way to pull fuel from the other tank.
This way I can isolate one tank if anything would develop with the other.
I sort of hated adding complexity, and adding one more preflight item to check (or forget to check), but it seemed a worthwhile addition in the end.

I don't see that as complexity possibly because I did somewhat the same thing. I ran the lines from each tank to a selector valve, then to a facett fuel pump. I also used two Princeton fuel probes so that I could monitor the level in each tank. These were hooked to my EIS and set to alarm at one gallon of gas in the tanks.
That makes your preflight to only visually checking to see if there is fuel in each tank.

I use a fitting that pulls fuel from the bottom of the tanks. The fitting uses a rubber bushing that makes a good seal on the tank bottom if the hole is carefully deburred and the bushings are lubricated before fitting insertion. The fittings I used have finger strainers and a fuel shut off valve. No leaks over thirty years but I have replaced the tanks, bushings and fuel lines once.

One thing I would do different would be to use a high grade automotive rubber fuel line for the flex line that is inside the tank to the pickup.
Back when I first built my MKIII, I modded the fuel tank area so I could use two 6 gallon boat tanks, and used the best available green plastic tubing down to the pickup.
When I built a 15 gallon tank for the center section, I ended up using the two boat tanks to go to the gas station and get/store fuel.
Last spring I noticed that one of the original plastic lines had broken off and was laying in the bottom of the tank. Granted, that original fuel line install was a long time ago, but still - ya can't beat real fuel line.
