Matt,
I used the resistance type along with a 5 volt regulator. I put a 510 ohm resistor in series with the sensor. The output goes to my EIS which I used to scale the output.
The setup limits the current in the sensor to less than 10 mA. The regulator keeps the readings independent of the aircraft buss voltage and also limits the open circuit voltage at the sensor to 5 volts and can take a short should it occur.
I have 9 gal tanks, and I chose to scale it so my maximum reading is 7 minimum is zero. I also use a fuel flow meter.

Thanks Everett,
Are the senders you use just automotive resistance type? Do you have a brand or part number?
My concern is that automotive types are meant to be mounted from the top of a fuel tank and i wonder how they hold up when mounted in the end plates in the Pulsar fuel tanks and they are pretty much permanently submerged in a way the weren't really designed for?
