My temperature probe is installed under the roof skin, between the two doors. It doesn't stick out but is bonded to the underside of the outer glassfibre skin, using aluminium filings mixed with epoxy.
This was on purpose to be able to measure skin temperature while parked in the sun. But it seems also to read air temperature correctly when in flight, as calibrated using a thermocouple to compare with the temperature of air coming through the NACA vents.
