It does this on the ground and in flight, has done it since purchase some ~30 flight hours ago. New hoses, new oil change and new tri-gauge tested, same thing. Oil pump, pressure sender or another issue?

Did you check the voltage supply / alternator ?
My beacon causes some instruments to pulse due to voltage drop. On idle the oil pressure drops due to low voltage of the alternator.
This looks more like an electrical problem

This is a 55, no lights on it. I think the electrical system is OK. When I first start it up, it stays steady above 5 as well.

While this may be an elec. problem with the transmitter there is another
possibility to consider.
If the "oil in" hose or fittings have developed a small leak this could be
sucking air and causing the fluctuation. In this case the indication would
likely be fine immediately after starting.
