Flat side fwd or aft? Another step to complete after reversing the spring and before weighing the aircraft is to actually measure the distance from the datum to where ever the axle winds up. The sample W&B worksheet that ZAC provides would be in error if the MLG axle is moved plus or minus four inches. Four inches error in computing the empty CG would be huge on a plane this small.

Oh My! I was assuming that everyone was measuring and setting these dimensions correctly on the W&B sheet. Has anyone actually asked Zenith/CH what the absolute answer is? As Bob pointed out that is a fairly large consequence - especially if it results in masking of a rearward CG condition.
I will try and talk to Zenith and see what they say.

Another avenue that might be worthy of consideration is just moving the wheels and axels, leaving the gear leg alone, I'm only familiar with doing this on a T18 with standard aircraft axels, not the Matco 3/4" so you're on your own there. Thorp came up with the mod. for the same reasons we're talking about, to place more/less weight on the tailwheel, can't remember for sure (been 20+ yrs ago) but I think that the tail was getting light due to most folks putting on heavier engines.
Neighbor made the mod on his, all it amounted to was a couple of 1/2" (I think) thick spacers that were offset drilled. LOT less hassle. Easy to tune to just how much more/less weight you want to move around also. If anyone is interested I'll get next door neighbor to dig up the print.

There is no absolute answer that applies to all aircraft except that the CG must fall within 20-30% MAC for all flights.
When you do the W&B for your aircraft, it is necessary to take an actual measurement with a plum bob from the datum to each axle. Combined with the weights measured at each wheel when the aircraft is perfectly level and empty, you will be able to calculate the CG.
You can't use measurements from another aircraft. The weights and arms will be different for each aircraft but the calculations still show the CG for your aircraft.
