What kind of empty weights are you 601XL builders seeing? Please indicate what engine you installed and any equipment out of the ordinary.

Tim,
My empty XL weighed out at 799 Lbs with the CG at 290 mm.
It is probably a LOT heavier than a stock XL as I have 600x6 tires/wheels/brakes all around (nose fork from a 801), dual aux tanks & gauges, dual sticks, dual brakes, ldg/taxi/position lights/strobes plus EFIS, AS & Alt steam gauge backups, xpndr/alt encdr, com. stereo intercom, ELT, etc. The engine is a Jab 3300 with a wood Sensenich Prop.
The Zenith 700 lb figure is probably a zero option, min required equipment, day VFR airplane.

I have seen between 750 and 800 lbs.

My XL weighed in at 777 pounds. Lights, center stick, steam gauges, no interior, no com, no transponder. Since then I've added a com and transponder. I have to say, it still climbs better than anything else at my home airport.
When I was considering the Corvair I was worried it would be heavier than other engine choices. In reality, the Corvair is about the same weight when you add all the other do-dads you need to really fly and enjoy your plane.

Hi Tim,
Mine came in at 710lbs (unpainted). Standard kit with the only options of
position/nav/strobe lights. Day VFR instruments and Jabiru 3300 with wood
Sensenich Prop.

Mine came in at 830lbs. Full six-pack with conventional gyros, Garmin
GNS-430, King KT-76A, confor-foam seats and sound/heat insulation
throughout the cabin.

633Z is 715 pounds empty, setup for night VFR,
plus a Westech CHT monitor (6 sensors to 1 gauge)
The only frill that I have is a Pioneer AM-FM radio.
