I'm in the process of recovering my Kitfox and learning how to cover at
the same time. I'm having a little trouble with the edges of the tapes
fraying. I'm using generic noname tapes from Aircart Spruce and I'm
wondering if I simply need to handle them much less or if brand name
tapes like those from Poly-Fiber will be a little more resistant to
handling? Anybody have experience with both?

Dave, I think you answered your own question. I am currently finishing up the covering of my bird and I had no problems with the Polyfiber tapes.

Well, in fact I didn't. I'm not using polyfiber and there is a good
chance the problem lies with my technique. Unless a person has used both
and found a difference it's difficult to tell. Perhaps I should have
asked the same question using the brand name Ceconite. I'm getting
better at it, but if different tapes give better results I'd like to know.

Dave,
The "Bias" tapes are a little fragile at the edges, otherwise the Polyfiber "non-Bias" tapes worked well. Just follow the Polyfiber manual, good idea to view the video also.

Try handling them less, using the tapes that you have on hand. You
should be able to lay down the WET bed of polybrush, lay the tape
into it, "wipe the brush dry and use it as a tool to press the tape
into the stripe of Poly-Brush"....quoting the manual. The pinked
edges of the tapes are susceptible to fraying if you handle them too
much. By practicing on something scrap, you will either learn to lay
down the tapes without fraying the edges, or you will learn that the
"no-name" tapes are not up to Poly-Fiber's standards.

I used the no name AC spruce dacron tapes and did not have any issues. You may be handling them too much or working them too much with the brush, just get the tape on, you can lay in the edges real nice with an iron after the polybrush dries.
