David,
The majority of the flying most of us do is local so the weight can be dealt with by using care. The few times you will be traveling "loaded" can also be dealt with . I am sure some of our more adventuresome types have gone far beyond the max gross that these machines are "legal ".
I own a Grumman Agcat I use in my cropdusting business and it was certified with a 1250 # load capacity....by merely loading it till the pilot decides the "safely controllable" weight and making a log entry to that effect he can legally fly the airplane...under restricted category. My plane now has 16000 hours with a lot of the time spent well over 2,000 # load. No popped rivets , no cracked tubing ...never been wrecked. Lots of real demanding work done....! Not that I am saying to do this with your Kolb but a little common sense goes a long way ...
I know our little Kolbs did not come out of the Grumman "Iron Works" but they will take a lot of load before they fall out of the sky or fail. Correct me if I am wrong , but here in the USA we can set our own gross weight when the experimental is built by the builder at the time of certification....and no destructive testing done......
Hey BB, your will-power must be awesome...I can't get by the dessert table .....no wonder my son gets the ultrastar in the air 50 feet shorter...I use to be called Fast Eddy...now they leave the s out...

My Mk-3 came in at 470# which is exceptionally light but most 582 powered birds I hear about are closer to 530 to 560.
Seems the Extra is a heavier bird with the wider cockpit, tail and instrument pod, steel gear legs, etc, if yours is 570 lb? I don't think its that much heavier than normal.

I talked to Bryan today, He seems to remember that the factory xtra came out
at 580#. That was with heavy gear legs, all the bells and extra heavy thick
glossy paint. also a 912S.
