Should it become necessary to EVER remove the wings,
then cut wires and/or coaxes in the middle of their
service loops. When replacing the wings, permanent
splices (and mated coax cable connectors)...

Precisely the approach I used. I would add that should I ever pull the
wings, I would add the connectors, one wire at a time, located such that
the connector will be inside the fuselage under the floorboards and out of
the weather, as opposed to under the wing root fairing. The floor boards
will need to be removed to access the spar bolts anyway.
