My first impulse would be to discuss this with Whirlwind...
Sudden, large throttle changes with constant speed props does not a happy engine make... From your description I suspect the prop draws enough oil when going from high pitch to flat pitch to momentarily suck down the oil galley causing your pressure gauge to fluctuate... How about using gradual throttle reduction to minimize sudden oil demands by the prop?
As far as not reaching 2700, the manufacturer will have that answer...
