I have very little experience with gravity fed carburetor fuel bowls C except for my Cessnas C motorcycles C lawn mowers C and ultralights C but it seems to me they are pretty simple.
I don't think the fuel tank has to be all that much higher than the engine.  I mean C look at a typical lawn mower.  The fuel tank exit is only an inch or two above the carb C and the mower runs full throttle most of all the time C at least mine does.

I'd think good fuel system components (hoses C filters C etc) would be all you need.  Assuming good maintenance C the rest pretty much takes care of itself C probably the kind of sytem you've got already!

You could do the calculations of determining the "pressure head" of your UltraStar's fuel system C but I doubt you need to.  You already know it works just fine.
