Keep in mind that that car will get very poor mileage doing 175 MPH
.....
Wish there was some way to estimate that MPG at real high speeds.

At these kind of speeds in a car, almost all of the energy is going to air resistance (above the basic inefficiency of the engine, which is roughly constant). Gas mileage will vary approximately as the inverse square of the speed. i.e., a car doing 150 mph will get 1/4 the gas mileage as it would at 75 mph. You should see what an Indy car gets at 200 mph!
