My first plane was a 701 with a Subaru EA-81. Great little one place STOL. If I where to build another I would not put more than 65hp on it. Remember it was designed originally for a 45hp.
If you are dead set on 100hp then there is no reason not to build a 750. If you are building from plans you are only talking about several hundred dollars in material to make the change. I am in the process of building a 750 from plans. I will assure you that it is a LOT MORE airplane.
In my not so humble opinion the 701 is a great fit if you need to meet the European ultralight rules. After exposure to both I would not consider building anything but a 750 if building under FAA rules. The 750 is optimized for sport pilot rules. It should weigh in at under 800 pounds and with a 1320 gross weight you have plenty of utility. It can also be built in a heaver version that gives you a 1440 pound gross as an experimental flown with a private pilot license. Do yourself a favor and go sit in them both. You will find it is a no brainer.
