Hi, Here is my 2 cents worth

The original Kitfox Model IV used 3/32 or 2 1/2 MM. It had a VNE of 125 Mph as compared to the Speedster which was 140. The airplanes are the same except for clipped wings, and some speed mods. They determined that above 125 the wind screen deformed and they used 1/8 inch. It prov ed to be a problem as some of them broke. I replaced my wind screen a few years ago, Tap plastic gave me 3 MM by mistake and I installed it. Seems a lot stiffer then my original and I was right. I would put the 3 MM back on if I were to replace it. Used heat gun to take out any stress, worked great.
If I were to take a bird strike, I would prefer the bullet proof Lexan.
