Hi Paul
About half way down the page I show the measurement tool I made out of a cereal box and where to measure from.
If you laminate both sides of a cereal or shoe box with 3M 375 packaging tape, or any packaging tape it stiffens and protects it.:

Paul,
Slide a white board, or cardboard under the rudder large enough to mark on the hinge point, rudder held central (mid point) and full left rudder then full right rudder
The rudder hinge is your pivot point (centre of your circle /Arc),
have your assistant push rudder pedal full travel to left and record position .
Centre rudder and mark on ,
Push rudder pedal fully right and mark on .
Now join the dots with straight lines and measure the angles with a protractor..
While you are doing this ..I recommend you rig the elevator and check that the rudder clears it (and trim tabs) at the correct deflection...if it does not you need to adjust the trim tabs !
Regards
Kevin
