I recently purchased the breakaway tailwheel to assist in moving the plane around without the worry of potentially breaking the wheel off in the original design.
I have the KXP and it looks like the original tailwheel assembly is epoxied on of some sort. So how would I get the epoxy off to be able to install the new tailwheel assembly? I have a couple pictures of what is installed and what I'm trying to install.

Most epoxies give up when heated. Usually 300 to 400 degrees will do
it. Depending on what kind it is, it might not need that much heat.
T-88 will usually fail at about 200.
I would use a heat gun and not a torch.

Thanks, I'll give that a shot once the rain finally stops.
Is there any recommended way of attaching the breakaway system: epoxy, drill and rivet, drill and bolt, or combination of some?

I would think drill and bolt is all that would be needed.
Unless new tail wheel socket is a loose fit, then add epoxy to "fill in
the gaps". The main strength would still come from the bolt.
